<p>2 Italian sausage links, casings removed<br />
1/4 cup chopped onion<br />
1 garlic clove, minced<br />
1 (14.5 ounce) can diced tomatoes, undrained<br />
1/4 cup tomato paste<br />
3/4 teaspoon sugar<br />
1/2 teaspoon dried basil<br />
1/4 teaspoon salt<br />
1/8 teaspoon crushed red pepper flakes<br />
1/8 teaspoon pepper<br />
1 egg, beaten<br />
3/4 cup ricotta cheese<br />
1 tablespoon minced fresh parsley<br />
4 lasagna noodles, cooked and drained<br />
3/4 cup shredded part-skim mozzarella cheese<br />
1 tablespoon grated Parmesan cheese </p>
<p><strong>Instructions:</strong></p>
<p>Crumble sausage into a small skillet. Add onion and garlic; cook over medium heat until meat is no longer pink. Drain. Add the tomatoes, tomato paste, sugar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, 20 minutes. Combine the egg, ricotta and parsley.<br />
Spread 1/4 cup sauce in an 8-in. x 4-in. x 2-in. loaf dish coated with nonstick cooking spray. Trim noodles to fit dish. Layer a third of the noodle pieces over sauce; top with a third of the remaining sauce, a third of the ricotta mixture and 3 tablespoons mozzarella cheese. Repeat layers twice.<br />
Cover; bake at 375 degrees F for 30 minutes or until browned. Sprinkle with Parmesan cheese. Let stand 15 minutes before cutting. </p>

<p>8 zucchini (about 12-15cm long)<br />
2 1/2 tbs olive oil<br />
125g Greek feta<br />
2 tbs currants<br />
1 clove garlic, finely chopped<br />
2 tbs dried breadcrumbs<br />
1 tbs finely chopped basil, plus extra small leaves, to serve<br />
200g grape or cherry tomatoes<br />
90g (about 6 slices) prosciutto, salami or leg ham<br />
125g cherry bocconcini, torn in half<br />
Toasted bread, to serve</p>
<p><strong>Directions:</strong></p>
<p>Preheat oven to 220°C. Trim 2mm from ends of zucchini then cut each into 4mm-thick slices, lengthways. Place in a bowl. Add 1 tbs oil and season to taste with salt and pepper. Toss. Heat a char-grill pan over high heat. Cook zucchini, in batches, for 1 1/2 minutes each side or until charred but not quite cooked through. Transfer to a roasting pan.<br />
Crumble feta into a bowl. Add currants, garlic, breadcrumbs and chopped basil. Season to taste and toss well to combine. Scatter tomatoes and feta mixture over zucchini. Tear prosciutto slices in half and strew over vegetables. Drizzle with remaining oil then roast for 15 minutes or until tomatoes have softened. Scatter vegetable mixture with bocconcini and extra basil. Spoon into a bowl and serve with toasted bread. </p>

<p>6 egg yolks<br />
3/4 cup white sugar<br />
2/3 cup milk<br />
1 1/4 cups heavy cream<br />
1/2 teaspoon vanilla extract<br />
1 pound mascarpone cheese<br />
1/4 cup strong brewed coffee, room temperature<br />
2 tablespoons rum<br />
2 (3 ounce) packages ladyfinger cookies<br />
1 tablespoon unsweetened cocoa powder </p>
<p><strong>DIRECTIONS</strong><br />
In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.<br />
In a medium bowl, beat cream with vanilla until stiff peaks form. Whisk mascarpone into yolk mixture until smooth.<br />
In a small bowl, combine coffee and rum. Split ladyfingers in half lengthwise and drizzle with coffee mixture.<br />
Arrange half of soaked ladyfingers in bottom of a 7&#215;11 inch dish. Spread half of mascarpone mixture over ladyfingers, then half of whipped cream over that. Repeat layers and sprinkle with cocoa. Cover and refrigerate 4 to 6 hours, until set. </p>
